Kitchen Design Layout
& Equipment Guidance

Empower Your Culinary Brigade with Harris•Aoki

Is your kitchen layout creating bottlenecks during service? Does your cooking equipment in the kitchen feel oversized for what you actually need? Most restaurants inherit kitchens designed for someone else’s operation, then wonder why service feels chaotic and costs spiral.

Harris•Aoki brings chef expertise to kitchen design. We shape layouts around your actual menu, guide on right-sized kitchen equipment, and work alongside your architects, MEP engineers, and compliance partners so your ideal kitchen design is operationally sound from the day it opens.

Imagine a kitchen where your team operates with seamless precision, hitting your peak-service covers without congestion, and where every piece of cooking equipment in the kitchen earns its space. That’s what happens when modern kitchen design follows operations instead of guessing.

How Harris•Aoki Helps?

Brief & Site Walk-Through

We understand your menu complexity, service model (à la carte, set menus, delivery-heavy), peak covers, and space constraints. We see what you're working with and what you're trying to achieve with your kitchen design.

Layout & Equipment Guidance

We deliver a workflow-optimized layout and kitchen cooking equipment list sized to your operation. Your architect gets clear specifications they can build from, no ambiguity, no guesswork.

Partner & MEP Coordination

We liaise with your design team, compliance partners, and MEP engineers as the modern kitchen design evolves. When questions arise during construction, we're there to keep the design sound and prevent costly changes.

Fit-Out Support & Handover

We're on-call through fit-out, ensuring the kitchen opens smoothly and your team can execute from day one.

Station & Equipment Sizing for Your Covers

We model capacity and throughput to your peak-service covers, so the kitchen scales with the business, not the other way around. This means kitchen equipment that actually handles your volume, stations placed to minimize hand-offs, and a layout that doesn’t become a liability as you grow.

FAQ

How long does the kitchen design process take, and what happens if we're already in the middle of construction?

The full process (brief through handover) typically takes 6–10 weeks, depending on complexity and build timeline. If you’re already mid-project, we can jump in at Phase 2 or 3, reviewing existing layouts, catching design issues before they become expensive changes, and coordinating with your architect and MEP team to keep things on track. The sooner we’re involved, the more we can prevent costly mid-build revisions.
Architects excel at code, spatial design, and regulatory compliance. We bring operations expertise, menu-to-layout translation, equipment sizing for your covers, and supply chain introductions. We sit alongside your architect as a specialist partner, coordinating across food safety, approvals, and the right technical specialists where needed, ensuring the beautiful design actually works for your team on a busy Saturday night. Without that operations layer, kitchens often look great on paper but create bottlenecks under real service pressure.
Savings come from eliminating unnecessary equipment and optimising layouts, so they depend on your starting point. If you’re inheriting an oversized kitchen or planning equipment speculatively, right-sizing alone can meaningfully reduce your fit-out spend. If you’ve already planned thoughtfully, the value shifts to operational efficiency and avoiding costly changes mid-build. We’ll be honest about what your kitchen can realistically save during the discovery call.
We work with your architect. We don’t replace them. Our role is to translate the menu and service model into operational briefs they can actually design from, then stay involved as questions arise. If you don’t have an architect yet, we can recommend trusted partners across the GCC who understand F&B operations. Either way, collaboration is the point.
Both. We help optimize existing kitchens, layout tweaks, equipment swaps, workflow fixes, and we design from scratch for new concepts. If your current kitchen creates bottlenecks or waste, we can audit it and recommend changes. If you’re building new, we prevent those problems from day one. The process is similar either way: understand your menu and operation, design around it, then guide the build.
