HALO – Menu Development and F&B Consultancy in Doha, Qatar

A strategic brand refresh for an established Qatar café, supported by new menu development, improved kitchen operations, and a complete operational toolkit for long-term growth.

Project Overview

HALO is one of Qatar’s established café brands, known for its specialty coffee, bakery, and all-day dining experience. With multiple locations and a loyal customer following, the brand had already built a strong market presence.

As Qatar’s café culture continues to evolve, so do guest expectations. Today’s diners want more than good food, they’re looking for hospitality concepts that bring together exceptional flavors, memorable experiences, distinctive branding, and visually engaging presentation. For an established brand like HALO, that shift opened up an opportunity: introducing a new menu offering while strengthening the overall concept and guest experience.

With a clear vision for HALO’s next phase of growth, the owner partnered with Harris·Aoki for a comprehensive hospitality consultancy engagement covering menu development, concept refinement, operational consultancy, kitchen optimization, chef development, and implementation.

THE VISION – Building a Stronger Brand for Qatar's Evolving F&B Market

Every successful hospitality brand eventually reaches a point where evolution becomes essential.

For HALO, that moment came after years of building a loyal customer base and establishing itself as a respected café destination in Doha. The business had proven its success, but leadership saw an opportunity to redefine the concept for a new generation of guests and further strengthen its position in Qatar’s growing café scene.

The ambition went beyond a new menu. The goal was a more refined dining experience, backed by a clearer brand identity, stronger operational systems, and a culinary offering that balanced creativity with commercial performance.

This vision ultimately shaped HALO’s evolution into a contemporary Dough Bar & Café, a concept built around craftsmanship, quality ingredients, memorable guest experiences, and operational consistency.

THE CHALLENGE – Evolving an Established Café in Doha's Competitive Market

As HALO prepared for its next stage of growth, the priority was evolving the brand while protecting the qualities that had earned guest loyalty in the first place. The aim was to introduce a new menu and elevate the overall dining experience, while making sure every change stayed true to the brand’s vision and could be delivered consistently across the operation.

Three strategic priorities guided the engagement.

CREATING A NEW MENU OFFERING

The new menu needed to bring fresh, distinctive offerings that reflected HALO’s evolving brand direction, without losing the quality, creativity, and consistency guests already expected.

STRENGTHENING THE GUEST EXPERIENCE

Beyond the food itself, the goal was a more cohesive dining experience, through thoughtful menu design, presentation, and concept refinement, reinforcing HALO’s position in Qatar’s competitive café landscape.

SUPPORTING OPERATIONAL EXCELLENCE

Every new menu item needed to work in practice, not just on paper. Recipes, kitchen workflows, operational systems, and team training were developed so the new offering could be delivered consistently, supporting efficiency, scalability, and long-term success.

OUR APPROACH – A Structured F&B Consulting Engagement

Every successful transformation starts with understanding the business behind the brand.

Before developing the new menu, Harris·Aoki conducted an on-site visit to get a complete picture of HALO’s existing operation. Kitchen infrastructure, service flow, menu performance, production methods, and the overall guest experience were all evaluated closely with the ownership team, and that visit became the foundation for every decision that followed.

The project then moved through a structured consultancy framework spanning concept refinement, menu engineering and recipe development, kitchen optimization, operational systems, and chef development, with each stage building toward a cohesive, scalable business model.

DELIVERING THE VISION

Working closely with the HALO team, Harris·Aoki helped redefine the brand’s culinary direction while preserving what had earned it its reputation.

At the heart of the project was a new menu offering, signature dishes that complemented HALO’s existing strengths while reflecting emerging dining trends and the brand’s renewed direction. Every recipe balanced flavor, presentation, operational practicality, and commercial performance.

Presentation mattered just as much. Each dish was developed for visual impact while staying practical for everyday service, with supporting recommendations on tableware, glassware, and equipment to round out the brand’s new positioning.

Behind the scenes, the same attention went into operational performance. Recipes were standardized within Meez, a cloud-based recipe management system, kitchen workflows were optimized, ingredient cross-utilization was increased to cut waste, and food cost strategy was built into the process from the start.

To set the team up for a smooth rollout, Harris·Aoki delivered hands-on chef development covering production techniques, plating standards, quality control, and day-to-day procedures, backed by a full suite of operational manuals and implementation tools so HALO had everything it needed to execute the new menu consistently and keep growing.
